What's for dinner....
Pazole
.
1 large onion chopped
2 Tb olive oil
1/2 lb pork chunks or chicken
.
Saute above until meat cooked and onion translucent
.
1 Tb chopped garlic
Salt and pepper
1 Tb Mexican oregano
.
Add to above and cook 3 to 5 min
.
1 quart chicken or vegetable broth
2 -30oz cans hominy
(I used 1 yellow and 1 white)
4 Tb. Chili powder
Add to above and simmer 30 min until meat is tender
.
Chopped cilantro
Chopped red onion
Sliced radish
.
Add these on top of Pazole when serving.

Can also have corn tortillas on the side..
.
Even better the next day.
.
Easily doubled for large family.
